Cooking Instructions

Beef Tenderloin Cooking Instructions (Tied)

These tenderloins came straight from the butcher to my facility where yesterday we hand tied and sealed each tenderloin. Oxidation during the process may cause a light browning on the outside which is normal.

The entire process will take 90 – 120 minutes, with about 30-60 minutes of cooking.

  • Remove beef tenderloin from the refrigerator 30 minutes prior to cooking

  • Preheat oven to 400°

  • Unwrap the beef tenderloin, place on a foil lined baking sheet and add seasoning. It is not necessary, but I like to add a little olive oil prior to seasoning. I also save a little seasoning to put over the cooked tenderloin.

  • If you have an oven ready thermometer, place in the thinnest part of the beef. If you do not have an oven ready thermometer, check regularly in the thinnest part of the tenderloin.

  • Cook until the internal temperature reaches 115°. Keep a close eye on the temp because once you are close it comes quickly. Remove from oven at 115°.

  • Once you remove meat from oven, immediately place meat on your cutting board.  Cover/tent loosely with foil.  You want it covered but need the heat to escape. 

  • Rest 15 minutes. The tenderloin will continue to cook another 8-10°. In the range of 125° and will produce a nice medium rare

Because ovens can cook so differently, I would start checking about 30 minutes in.  The last 20° will happen quickly. 

If you like it more well done, place a few sliced pieces back in the over for a couple minutes. 

Beef Tenderloin Instructions (Cooked)

Option 1 
Serve at room temperature.

Remove from fridge 30 minutes prior to serving

Option 2 
Warm at 250° 10-15 minutes.
BE VERY CAREFUL NOT TO OVERCOOK

Mac and Cheese and Mashed Potatoes.

These are fully cooked so just need to be reheated.

Leave covered and warm in a preheated 350° oven for  30-40 minutes stirring frequently.  You can also warm in a crack pot.

Rolls

Place on cookie sheet and bake in a preheated 375° oven for  5-7 minutes.

Green Beans

Leave covered and warm in a preheated 350° oven for  13-15 minutes.

Mushrooms 

Warm in sauce pan over low heat 10-15 minutes.
You can microwave as well

Dips 

Remove cover and warm in a preheated 350° oven for  13-15 minutes.

Crab Batter /Crab Cakes

Place on cookie sheet and bake in a preheated 425° oven.
Crab Cakes 4-5 oz. 13-15 minutes 
Crab Balls 1 oz 6-8 Minutes
Looking for a golden brown. A drizzle of butter on top prior to cooking never hurts either.

Sliders

Leave covered and warm in a preheated 350° oven for  13-15 minutes.
 

Casseroles

Remove cover and bake in a preheated 350° oven for  55-60 minutes.  You can test the center with a toothpick and when it comes out clean its ready.
